When you’re done making this mediterranean salad, you can serve it as is, or you can add a dollop of plain yogurt to the top. For a protein boost, consider stirring in a can of strained and rinsed garbanzo beans at the end. Delish!

Easy Mediterranean Salad in the Instant Pot
Ingredients:
- 1 cup bulgur wheat
- 1-3 tomatoes, chopped, as desired
- 1/4 cup parsley, chopped
- 2 teaspoons sumac
- 1 teaspoon dehydrated garlic
- 2 cloves garlic, minced
- 2 Tablespoons lemon juice
- 4 Tablespoons tahini
- 1 Tablespoon olive oil
- Salt and pepper, as desired
How to cook bulgur wheat:
Set Instant Pot to sauté setting.
Add 1 1/2 cups salted water and bring to a boil.
Add bulgur, sumac, and dehydrated garlic.
Turn off sauté setting and secure the lid on the IP. Select “soup” setting for 1 minute.
While the bulgur wheat is cooking:
While the bulgur is cooking, chop your tomatoes and parsley.
In a small bowl, combine the tahini, lemon juice, garlic and oil. Stir in the tomatoes and parsley.
Allow the Instant Pot to natural release, fluff the bulgur with a fork, and stir in the tahini-tomato mixture.
