Crunchy Chocolate Chip Granola Bars

I've been experimenting with granola bars lately.  If you prefer your granola bars crunchy rather than chewy, you'll like this simple recipe using toasted oats, chocolate chips, and honey.

Here's what you'll need:

4 cups of quick cooking oats
1/3 cup melted butter
2/3 cup honey
1 teaspoon vanilla extract
3/4 cup chocolate chips

Preheat oven to 350.

Toast oats on an ungreased baking sheet for about 15 minutes, stirring once halfway through.  Remove oats and let cool to room temperature.

Combine remaining ingredients in a large bowl; add oats and mix thoroughly.  Be sure the oats have cooled first or the chocolate chips will get soft! 

Spread into 9x13 pan, lightly oiled, and press firmly to flatten.

Bake for 25-30 minutes until golden brown.  Let cool and then cut into bars.  Enjoy!

    We tried this recipe this weekend with my boys. We used 1/2 cups of chocolate chips and about 1/4 cups dried cranberries. My boys preferred it broken up into chunks to eat it as granola bites! Since it was all crunched up I decided to try it with a little milk and it was delicious! Great homemade cereal! :)

      Hello, Kimie. I usually keep them in a glass pyrex and we eat them before the week is through. I imagine they could be frozen, but I haven’t personally tried that. So glad you came by – it’s nice to meet you!

    I make a totally raw granola bar .
    4 cups oatmeal
    1 cup peanut butter
    1/2 cup honey
    1/2 cup chocolate chips
    Just stir, put in casserole dish and refrigerate, cut and enjoy!
