This CrockPot Corn Casserole recipe is a creamy, comforting side dish that’s the perfect addition to your regular meal plan. We love that it frees up your oven during holiday cooking, and also keeps your kitchen cool during simple summer meal prep.
The best thing about this casserole is that it can be made in a CrockPot or slow cooker, so it doesn’t take up precious space in an oven while a big dinner is being cooked.
Right now, since it’s the middle of summer, I’m happy to have recipes like this on hand because they don’t require me to use my oven.
This corn casserole recipe is on the sweeter side, which to me is perfect served alongside my CrockPot Red Beans & Rice. We served this as a meal when we had some friends over, and it was a big hit. I almost felt bad because it was so easy, but I was thrilled that it didn’t cost us much to feed a crowd.
If you’d prefer a less sweet corn casserole, feel free to omit the two tablespoons of sugar.
Oh, and one more thing — if you need quick and easy clean up, don’t forget to use a disposable CrockPot liner before you get started. I don’t use them often, but I do like to keep them on hand for occasional use.

Creamy CrockPot Corn Casserole
Makes about 12 servings
Prep time: 5 minutes
Cook time: 2 ½ hours
Ingredients:
- 1 can yellow corn, drained
- 1 can cream style corn
- 2 tablespoons sugar
- 1 egg, beaten
- 1 cup sour cream
- 1 cup shredded cheddar cheese (mild or medium sharpness)
- ¼ cup butter, melted
- 1 pouch cornbread mix (6-7 ounce package)
Directions:
1. In a large mixing bowl, combine all ingredients.
2. Spray the inside of a slow cooker with non-stick cooking spray. Pour the corn casserole batter into the slow cooker.
3. Cover the slow cooker and set to high. Slow cook for approximately 2 ½ hours, until the center has set.
4. Transfer the corn casserole to a serving bowl and serve hot.
