Meal Planning Resources: Save Time & Money

I'm a firm believer in the time-saving and budget-friendly benefits of meal planning.  I've shared many of my meal plans here with you over the past year and a half.  Today, I'd like to share a few meal planning links and ideas from around the web.

:: Kelly @ The Nourishing Home shares a wonderful bi-weekly meal plan at The Better Mom.  She also shares many meal plans and ideas on her facebook page, The Nourishing Home. (If you recognize Kelly's name, she had many featured posts here @ LABB over the summer.  She's a gem!  What a blessing she's been during our move.)

:: Menu Plan Monday is a great link-up that offers hundreds of meal plans.  If you are at a loss for ideas or new recipes, it's a great place to visit.

:: Another fun idea is to menu plan with a theme; Simple Organized Living explains how she does this here.

:: Money Saving Mom offers helpful meal planning printables.  She also did a series called "31 Days to a Better Grocery Budget" that you don't want to miss!

:: Yes, you can stretch ONE whole chicken into SIX meals.  Laura @ Heavenly Homemakers shows you how, here.

:: Looking for a print book to help with meal planning?  I gleaned quite a few useful tips from Family Feasts for $75 a Week: A Penny-wise Mom Shares Her Recipe for Cutting Hundreds from Your Monthly Food Bill.  You can easily get it from Amazon or check with your local library.

Do you meal plan?  What are your favorite meal planning resources?

Our Homeschool Year Began This Week! +Resources For You

First Day of Second Grade (taken with my smartphone)

First Day of Second Grade (taken with my smartphone)

Yes, it's one week later than we normally begin.

I'm keeping the first semester streamlined, using our favorite Rod & Staff curriculum for each subject.  Once we get more settled in our new home and schedule, I may change a few things, but right now this works for us.

This year we busy ourselves with second grade, which is comprised of Bible study, reading, math, basic grammar, spelling, and phonics on a daily basis.  Once each week, we're adding in health, manners, social studies, penmanship, and nature in 10-15 minute increments.

We're blessed with an excellent homeschool cooperative program nearby, with enrichment classes available just for homeschooling families, of which we are reaping the benefits of a history unit study class as well as an art class.

Here are some resources that have been helpful as we've planned this year:

  • Joy @ FiveJs.com has great education-related articles and printables available here.
  • The Well Planned Day Family Homeschool Planner is due to arrive here this week.  I'm excited about using it; LABB readers gave it a thumbs up when we discussed it on our FB page
  • Ann Voskamp's post "Why Would Anyone Be Crazy Enough to Homeschool?" has blessed me yet again.  It's from earlier this year, but I find myself revisiting it for encouragement and inspiration.
  • I enjoyed Mrs. June Fuentes's list of homeschool tips.  Like her, we have Friday Fun Days; any work we've fallen behind on gets done in the morning, but the rest of the day is for "fun".  Field trips to the park, museum, or nature center are our primary agenda on Fridays. (Also, Mrs. Fuentes is a dear friend; have you checked out her blog before?  You will be blessed by it!  She just released her ebook "True Christian Motherhood." Click here to view more details.)

Whether or not you've chosen to homeschool, are you actively involved in your child's education?  What resources have blessed you? I'd love to know!

*If you'd like to see last year's curriculum (1st grade), it's listed here.

Back-to-School Lunches Are A Snap When You Wrap!

rolls

Featured post by Kelly from The Nourishing Home

Wraps (a.k.a. Roll-Ups) are a tasty, fun and attractive alternative to the traditional sandwich. We love to wrap – In fact, my kids have eaten foods they normally turn down when I roll it up in a healthy homemade tortilla. Apparently, the cute little roll-up makes everything look and taste yummier!

Below are a few of our favorite wholesome lunchbox wrap recipes, as well as a lot more ideas for real food wrapping … Enjoy!

A healthy wrap begins with a nutritious tortilla. You can make your own healthy homemade tortillas or select a nutritious whole grain or gluten-free wrap.

Wrapping Tips:

• A warm tortilla is generally easier to roll-up than a cold one, and is less likely to break or tear. So once you’ve got the ingredients ready for your wrap, heat a skillet over medium heat and slightly warm the tortilla on both sides. Then add your wrap ingredients and roll, following the tips listed below.
• To help “seal” the tortilla, include some form of spread as a base layer (like mayo, cream cheese, nut butter, etc.). Evenly distribute the spread across the entire tortilla. Then add your wrap ingredients making sure to leave about one inch of one side of your tortilla free of ingredients. Start rolling on the side with ingredients, so you end the roll-up on the side with spread-only in order to help seal the wrap.
• Once you’ve finished rolling-up your wrap, gently squeeze it with cupped hands, like a sushi chef does with a sushi roll. Then, use a serrated knife to cut the wrap in half or into small rounds, if desired.

Greek Salad Wrap

½ cup diced grilled chicken
1 large organic romaine lettuce leaf, chopped
5-6 kalamata olives, chopped
3 tbsp crumbled feta cheese
2 tbsp diced organic tomato
2 tbsp diced organic cucumber
Italian Salad Dressing
1 healthy homemade or store bought tortilla

In a small bowl, combine all ingredients and add a drizzle of Italian salad dressing and mix well. Spread a thin layer of mayo evenly across entire tortilla. Add Greek salad ingredients and roll up.

Banana Nut Butter Roll-Up

½ large banana, sliced thinly
2 tbsp of your favorite nut butter
1 tbsp raw honey
1 healthy homemade or store bought tortilla

In a small bowl, combine nut butter and honey. Spread evenly across entire tortilla. Add sliced banana and roll up.

Turkey Spinach Wrap

3-5 thinly sliced nitrate-free turkey slices
Fresh spinach leaves
3 tbsp grated raw cheese
1 healthy homemade or store bought tortilla

Spread a thin layer of mayo evenly across entire tortilla. Place spinach leaves evenly across tortilla and sprinkle with cheese. Top with turkey slices, then roll up.

Strawberry Cream Roll-Up

2 oz cream cheese, softened
½ tsp raw honey
3-4 fresh organic strawberries, finely diced
1 healthy homemade or store bought tortilla

In a small bowl, combine cream cheese and honey. Add diced strawberries and mix until well combined. Spread evenly across entire tortilla and roll up.

Cinnamon Apple Roll-Ups

2 oz cream cheese, softened
½ tsp raw honey
Dash of ground cinnamon
1 tbsp finely chopped raisins
¼ cup finely diced organic apple
1 healthy homemade or store bought tortilla

In a small bowl, combine cream cheese, honey and cinnamon. Add diced raisins and apples and mix until well combined. Spread evenly across entire tortilla and roll up.

More Delicious Wrap Ideas:

The following are more ideas for creating delicious, nutritious wraps/roll-ups …
