I also plan to tweak the granola bar recipe a bit this week. I'd love to integrate peanut butter somehow; any suggestions?
Here's what's on our menu this week:
Breakfasts /Snacks:
- Soaked whole wheat bread with butter & jam
- Crunchy granola bars
- Fresh fruit bowls
- Hardboiled eggs and fresh veggie juice
- Scrambled eggs, served alongside a mixture gold and sweet skillet potatoes
- Whole wheat soaked banana bread
Dinners:
- Grilled sirloin patties with carmelized onions and cheddar; grilled carrots
- Grilled amish chicken with potatoes, peppers, onions, garlic; grilled corn on the cob
- Salad with leftover grilled chicken and corn, chopped dates, avocado, onion
- Chicken roti (curried with potatoes and carrots)
- Shredded beef tacos piled high with cilantro and veggies

I just came across your site. I’m always looking for new healty dinner ideas to feed my family. Most recipes I find include sugar, white flour, or canned products which are full of preservatives. I look forward to tuning in often to your blog for some healthy alternatives.

As for the peanut butter, you can add it in with the melted butter and honey, although it might make it more of a soft and chewy granola bar. It’s funny, I was just experimenting with this last week. My kids liked the peanut butter, but I also included chocolate chips in it.

Chili pie looks good! We smoked pork using Morton’s Cure- makes everything sort of hammy! My husband pulled it for sandwiches or simply as the entree. We pressure canned chicken soup using an old chicken deep in the freezer, additionally we canned up the carrots left over from making the soup. Today we should be pickling the first harvests and then working on something yummy with the zucchini that ripened. Good stuff!
