Meal Plan, Week of 5/9

 
 
Here's our meal plan for this week:
 
Breakfasts ~
Fresh fruits, yogurt
Strawberry smoothies
Creamy toasted rice porridge with coconut oil, raisins, and almonds

Oats groats with coconut oil, raisins, nuts, and/or almond paste (x2)
  
Lunches ~
Leftovers, salad
 
Dinners ~
Black bean pumpkin soup
Tostadas with avodaco and veggies, brown rice
Bean, rice, and toasted corn burritos, side salad
Grilled chicken pieces, grilled corn
Grilled flank steak, grilled peppers and potatoes 
 
Snacks ~
Fresh fruits
Veggies and my easy garlic hummus
Nuts
Raisins
Popcorn

      Black beans, pumpkin puree, chili powder, onions… and a bit more. Maybe I should share the recipe and photos here soon? ;)

    Jaime, sounds fantastic.

    Smoothies are a favorite around here. I also plan on juicing some carrots and apples.

    Yogurt with blueberries, flaxseed oil, and almonds makes a good treat around here.

    I make the baby a powerhouse cereal made from millet, oats, and lentils. I then add coconut oil, yogurt, and blueberries.

    For lunch we’ve been having more salads.

    Dinner is varied right now, but I hope to get more organized with that as well.

    You’ve been a true encouragement with your menu plan for the week. Keep up the good work.

    Kinda chiming in late, but wanted to say that I’m boring. I have the same meal plan every wk (will just do dinners for simplicity’s sake): meat and salad Monday; T-Th-Sat. eggs and salad; Wed. cheese, bread, salad; Friday salmon and salad; Sunday cheese or vegan salad. Will sometimes cook veggies that come in food co-op bin or from garden.

    OK, I say I’m boring, but happily I married a non-picky DH and my DS, 4, doesn’t know any better. As long as I don’t have to eat the same thing every day, I’m good. :)
