I'm working on a couple new recipes this week; if they turn out well, I'll share them here. We're all looking forward to trying some new meals! Since my chicken pot pie with a savory herb and cheddar crust is a family favorite, I'm hoping to create a variation of it using beef and potatoes, with a creamy beef base. Yum!
Here's what's on our menu this week:
Breakfasts /Snacks:
Soaked whole wheat bread with butter & jam
Crunchy granola bars
Fresh Fruit
Hardboiled eggs and fresh veggie juice
Nuts and dried cranberries
Easy garlic hummus
Whole wheat soaked banana bread
Dinners:
Grilled sirloin patties with carmelized onions and cheddar, grilled carrots
Grilled amish chicken with potatoes, peppers, onions, garlic
Beef and potato pie with whole wheat and cheddar crust, garlic mashed potatoes, green beans
Chicken roti (Trinidad-style, curried with potatoes, chickpeas, and carrots)
Shredded beef tacos piled high with cilantro and veggies
You can view my healthy and frugal recipe index here. It's a work-in-progress!
What are you having this week?
