Meal Plan, Week of 3/7

 

Sauteed sweet and white potatoes, served alongside eggs

Just two days ago, we enjoyed a taste of Spring - a bright, sunny day with temps that climbed all the way to 63.  It was beautiful!  And then yesterday the snow re-appeared, and this morning everything was a blanket of white.   Ah, the joys of living in the Midwest!

It looks as though we'll have a couple nice days this coming week, so we're hoping to grill out at least once.  How about you?  Are you beginning to see Spring where you are?

Here's what we're planning for this week:

Breakfasts

Maple pecan muffins with chocolate chips, fruit, yogurt

Banana nut muffins, fruit, yogurt

Eggs with horseradish and dill, sauteed sweet and white potatoes

Salty eggs over crusty whole wheat bread

Oat pancakes with sliced bananas

Lunches

Turkey bacon, cheddar, and lettuce sandwiches

Corned beef and cheddar sandwiches

Egg salad on crusty authentic German pretzel bread

Leftovers x 2

Dinners

Chicken picatta in a light lemon sauce with capers (some of you may remember this from last week's meal plan; it never became a meal :) )

Curried chicken and rice stir-fry, green salad (recipe and photos coming soon!)

Beef tacos, loaded with cilantro and veggies, spanish rice

Grilled chicken breasts with grilled potatoes, peppers, and onions

Whole wheat spaghetti with chicken and veggies in a light tomato sauce, topped with lots of fresh parmesan

  2. WOW your picture jumped out at me. It’s beautiful. It made me remember how hungry I am. LOL.
    Your meal plan sounds great! Maple Pecan Muffins with Chocolate Chips oh my! I’m going to have to look through my pantry to see if I have the ingredients to make those!! I’m on a grocery budget and already maxed out this week. :)

    I actually have a meal plan this week–I’m so proud of myself! My dinners include Homemade Pizza, Crockpot Chicken Broccoli Rice, Potato/Chicken Noodle Soup, Oatmeal Bars, and Dry Cereal. I usually have dry cereal once a week for dinner, so I thought, “Why not use it as part of my plan?” I find your weekly plans inspiring! ;)

    We are having this week:

    Breakfast, oatmeal or cerel, eggs turkey bacon, protein shakes, waffles
    lunch, left overs or sandwiches and salad

    Dinner, Mon chili, Tues enchiladas, Wed, Fajitas, Thursday Spaghetti Friday, Meatless, bean and rice, beans quesadillas, soup and cornbread, Sat Homemade Pizzas, Sunday, whole chicken twice baked potatoes, glazed carrots
    When all else fails we defrost a chicken breast and throw some bbq sauce on it and bake it.
