Fluffy Oat Pancakes… Mmmm!

These oat pancakes are always Gentry's first choice for breakfast.  In the evenings, during his bedtime prayers, I can often hear him begin with, "Dear God, please let mommy make pancakes for breakfast in the morning..."  So sweet!  How could I not indulge the child?

They are especially yummy topped with sliced bananas and real maple syrup.

Here's what you'll need:

1 1/2 cups of oat flour
1/2 cup of rolled oats
1/2 cup of all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups milk
2 eggs
3 tablespoons butter, melted and cooled slightly

In a large bowl, combine flours, oats, baking powder, and salt.  Pour in the milk, eggs, and melted butter.  Mix until smooth.

Using a lightly oiled griddle or frying pan (warmed over medium high heat), cook the pancakes.  Use 1/4 cup of batter for each pancake.  Brown on both sides and serve while warm. 

If you have a couple of extra pancakes, they keep well in the freezer.

    I've never tried oat pancakes. They look really good and very simple to make. I'm trying to find some simple breakfast foods I can make for my family. Getting very tired of cold cereal, but feel so rushed in the morning.

    I have a question. Do you grind the oats to make the oat flour or do you buy it? I have seen some recipes that call for you to grind some of the oats. These look delicious. Thanks for sharing. :)

    Mona, I grind mine, but you can also purchase it ground if you don't a grain mill. If you look on my sidebar, under "favorite posts," you will see a post titled "Why Grind Your Own Grain" that I wrote earlier this year. It helps explain my reasons for grinding the oats fresh. Hope that helps!

    These sound so wonderful! I add 2/3 a cup of oatmeal to my regular pancake recipe because I haven't figured out how to find the oat flour yet. I am going to see what I can learn from your grinding oats article…Thank you for this great recipe. My husband is diabetic and the oat flour would make it even easier for him to have an occasional pancake treat (paired with plenty of protein!) I look forward to reading more on your blog!

    Did you or can you soak this recipe? I usually try and soak my oatmeal when I can. If you don’t soak is this just convenience or do you feel it’s not needed? Still learning about soaking and all that goes with it.
