Easy Grilled Carrots With a Honey-Butter Glaze

Don't you love grilled vegetables?

This grilled carrot recipe is a winner around our house.  No aluminum foil needed!  Whether by themselves or paired with meat and rice, they are a tasty, healthy treat.

My oldest son grabs the carrots and eats them before I even get a chance to throw them on the grill.

Here's what to do:

Choose several carrots that are no more than an inch or so in diameter at their thickest point; peel them.

Parboil for about five minutes or so, until they are just beginning to tender but still have crispness.  Do not overcook!  Remove from pot.

Brush lightly with melted butter.  Sprinkle with sea salt.

Grill on high for about 6-8 minutes, until carrots are tender, turning once halfway through.

In the meantime, wisk 1/4 cup melted butter and a drizzle of honey.  Set aside.

Remove carrots from grill and brush with honey-butter glaze.  Season to taste with sea salt and freshly ground pepper.
